 Hot Italian Beef Sandwich

Beef chuck roast 
Dry Italian herb blend
Salt
Chopped garlic
Ped pepper flake
Paprika
Beef stock, enough to cover the beef
1 Bay Leaf
Italian Rolls
Bell Peppers
Giardiniera

Season beef and rub the seasonings in really well. Turn InstantPot on sauté , put in your meat, sear on all sides. Pour in beef stock and add a bay leaf.
Set your InstantPot to slow cook and allow it to simmer for 2.5 hours. Once it's finished, allow the beef to cool in the au jus. 
When your ready to eat, slice your beef and warm it in the au jus. 
While it's warming, sauté your bell peppers until soft. 
Build your sandwich with hot beef, peppers, chopped giardiniera, and au jus.
